Ocean Trout with Fresh Herb and Lemon Crust  

Serves 4

4 tbsp chopped herbs (parsley, basil & mint)
1 lemon
freshly ground salt & pepper
100 gm melted butter
4 x 160 gm end pieces ocean trout fillet, skinned & boned
24-30 green beans, topped & tailed

Preheat oven to highest degree.

Mix together herbs, zest of ½ lemon, salt and pepper. And mix together juice of ½ lemon with melted butter.

Place fish on a baking tray, coat with lemon butter, sprinkle with herbs and press in to make an even crust. And sprinkle a small amount of butter around fish and cook in oven for 3 mins.

When fish is almost ready, blanch beans in lightly salted boiling water. Then drain well and place on individual plates, top with fish and spoon small amount of heated lemon butter over top.
