1 red capsicum
1 telegraph cucumber
2 spring onions
3 ripe tomatoes
1 red chilli
olive oil
chopped parsley
freshly ground salt and pepper
1 lime
24 sardine fillets
flour
1 lemon
mayonnaise
Dice and mix the capsicum, cucumber, onions, tomatoes, chilli, oil, parsley, salt, pepper and lime juice. Set aside.
Flour the sardines and cook on an oiled grill, sprinkling with lemon juice.
To serve, scatter salsa on plate, place sardines on top and sprinkle with mayonnaise.
