400 gm carrots, peeled & sliced
a pinch each of cumin, paprika, chilli powder & turmeric
1 garlic clove, crushed
1 lemon
½ tbsp honey
chopped parsley
freshly ground salt & pepper
16 sardines
sea salt
olive oil
Boil carrots in a little water until tender, drain and mash. Mix in cumin, paprika, chilli powder, turmeric, garlic, a good squeeze of lemon juice, honey, 1 tspn parsley, salt and pepper. Add 1½ tbsp olive oil and stir.
Season sardines really well with freshly ground sea salt and a squeeze of lemon. Oil the ridged grill and cook. Turn over and sprinkle with more salt, pepper and lemon juice.
Mound the carrot mix on serving plates, place sardines on top, sprinkle with parsley and serve with a wedge of lemon on the side.
