Smoked Salmon Pizza  

Serves 2

2 brown onions, finely sliced
olive oil
1 bought pizza base
freshly ground salt & pepper
10-15 capers
a splash of balsamic vinegar
8 slices Tasmanian smoked salmon
sour cream
chives

Preheat oven to 225°C.

Saute onions in a little oil until softened.

In the meantime, place base on pizza round and brush lightly with oil, adding salt and pepper, if you like. Then cook in oven until golden brown.

Add capers and balsamic to onions, and mix well. Then spread out on pizza base, lay salmon on top and cook in oven for up to 10 secs, to warm salmon.

To serve, sprinkle with sour cream and chives.
