Steamed Salmon with Lemon Dressing  

Serves 2

2 x 180 gm salmon steaks
freshly ground salt & pepper
1 lemon
3-4 tbsp olive oil
1 tbsp capers
10 pitted green olives, sliced
fresh dill, chopped

Boil water in a large saucepan. Put salmon on a plate, season and sprinkle with juice of ½ lemon. Then place plate in steamer basket, cover and cook for 7-8 mins.

In the meantime, whisk up olive oil, juice of ½ lemon, a little salt, capers and olives.

To serve, place fish on separate plates, spoon dressing over top and sprinkle with dill
