Thai Fish Cakes  

Serves 4

1 garlic clove
½ cm piece of ginger
¼ large red capsicum
sweet chilli sauce
250 gm salmon scraps
50 ml coconut cream
salt
1 egg
3 spring onions
coriander leaves
plain flour
vegetable oil
1 telegraph cucumber Preheat oven to 220°C

Process chopped garlic, ginger, capsicum and 2 tbsp sweet chilli sauce. Add chopped salmon, coconut cream and a pinch of salt, and process. Then add egg and process briefly. Put in bowl.

Chop spring onions and coriander leaves, and mix well into mixture.

Form patties, flour lightly and cook on both sides in oiled pan. Then cook in oven for about 2-3 mins and drain well on kitchen paper.

Slice cucumber and place around plate. Then top with fish cakes and sprinkling of chilli sauce.
