olive oil
freshly ground salt & pepper
1 lemon
2 x 180 gm tuna steaks
2 heaped tbsp mayonnaise
12 fresh basil leaves, chopped
10 baby potatoes, scrubbed well
12 pitted black olives, chopped
Mix together 4 tbsp oil, salt, pepper and juice of ½ lemon. Put tuna into marinade and set aside.
In another bowl, mix together mayonnaise, juice of ½ lemon and basil.
Boil potatoes until tender and drain. Add a little olive oil, salt and pepper, and crush with a fork. Then mix in olives and some more oil.
When potatoes are almost ready, sear tuna on grill, brushing regularly with marinade.
To serve, mound potato mixture on plates, top with tuna, and sprinkle with marinade and basil mayonnaise.
