Better than ever - Fish and Chips
Serves 4 people
Ingredients
- 500g flathead tails
- Large pinch of lemon pepper
- ¼ cup sesame seeds
- Rind from lemon, finely grated
- 1 tablespoon sesame oil
- 1/3 cup extra virgin olive oil
- Lemon Wedges
- 6 Washed Potatoes cut into wedges
- Cooking spray
- Lettuce, shredded
- Cherry tomatoes
- Cucumber, sliced
- Red & Yellow capsicum, halves and sliced.
Fish
- Combine Flour, sesame seeds, lemon pepper and the lemon rind in a bowl and mix thoroughly.
- Coat the flathead tails with the flour mixture and shake off any excess flour.
- Heat sesame oil and olive oil in a heavy based frying pan.
- Add the fish and cook for 2 to 3 minutes on each side or until crust is crispy and brown. Serve immediately with lemon wedges, home made potato wedges and a green garden salad.
Potato Wedges
Place potato wedges in baking dish and spray with cooking spay to coat evenly. Place in hot oven (200 C) for 30 minutes or until golden brown and cooked through.
Garden Salad
Place all ingredients together in bowl and toss to combine.
