BLUE EYE WITH CARAMELISED ONIONS & TOMATO
Serves 2
olive oil
1 large onion, finely sliced
freshly ground salt & pepper
2 cans diced tomatoes, drained a little
½ cup vegetable stock
a pinch of brown sugar
a splash of Asian chilli sauce
a splash of Asian fish sauce
2 tbsp lime juice
1 garlic clove, crushed
1 tbsp freshly chopped coriander
2 x 180 gm blue eye fillets (or any other steaky fish), cut in half
12 snowpeas
Heat oil in a non-stick pan and gently saute onion with seasonings until caramelised and golden.
Add tomatoes, stock, sugar, chilli sauce, fish sauce, lime juice, garlic, pepper and coriander. Mix well and cook for a few minutes.
Place fish on top of tomato mixture, cover, turn heat down and gently simmer for about 4-5 mins.
Blanch snowpeas in lightly salted boiling water and drain.
To serve, place snowpeas on each plate and top with fish and sauce.
