SALT & PEPPER SQUID
Serves 4
600 gm squid
1/3rd cup plain flour
1 tbsp sea salt
1 tbsp ground Szechuan pepper
4 cups vegetable oil
2-3 spring (green) onions, finely chopped
1-2 garlic cloves, finely chopped
2 chillies, finely sliced
lemon wedges
Clean and cut each squid body into 4-6 pieces, leaving tentacles whole. Then wash and pat dry with paper towels.
Mix together flour, salt and pepper in a bowl. Toss in squid and then shake off any excess flour.
Preheat oil to 180°-190°C and fry squid until golden brown. Drain well on paper towels and transfer to a bowl.
Add spring onions, garlic and chillies. Toss well and serve with lemon wedges on the side.
