Tuna Hummus Dip  

Tuna hummus dip

Makes 3 Cups
Ingredients
· 425g can tuna in oil, drained, flaked
· 420g can chickpeas, drained
· 1/2 small red onion, chopped
· 2 tblsps lemon juice
· 2 tblsps water
· 2 tsps paprika
· Salt and pepper, to taste
· 3/4 cup reduced-fat cream
· Cheese cubes, carrot sticks and celery sticks, to serve
· Chopped fresh herbs, to garnish
Method
1 Cook the tuna in a heated frying pan, stirring occasionally, until lightly browned.
2 Process chickpeas and red onion in a food processor until almost smooth. Add hot tuna, lemon juice, water, paprika, and salt and pepper to the chickpea mixture. Process until smooth. Transfer the tuna mixture to a medium bowl and stir in cream.
3 Serve the tuna dip with cheese cubes, carrot sticks and celery sticks. Garnish with chopped fresh herbs.
Hint: Dip can be made up to 3 days ahead. Keep covered in the refrigerator. For a change, serve with savoury biscuits.
