1 tspn onion powder
1 tspn garlic powder
1 tspn dried oregano
1 tspn dried thyme
1½ tspn paprika
1 tspn cayenne
1 tspn salt
freshly ground black pepper
600 gm groper, blue eye or snapper fillets
8 wedges of watermelon
plain flour
yoghurt
½ lemon
mint
½ telegraph cucumber
Mix spices together and coat fish in blackened mix.
Heat oil on grill or in pan and cook fish, brushing with oil and turning over.
At same time, cut watermelon to about ½ cm thickness, coat with flour and cook together with fish, also brushing with oil and turning over.
To make raita, mix together yoghurt, squeeze of lemon, chopped mint and grated cucumber.
To serve, place fish and watermelon on plate, top with raita and sprig of mint.
