Cantonese Steamed Snapper  

Serves 4-6

1 whole plate-sized snapper, scaled and cleaned
2 cm piece of fresh ginger, peeled and finely sliced
Japanese soy sauce
Chinese broccoli, cleaned

Fill a wok to 1/3rd with water and put a bamboo steamer on top. When boiling, put the fish on a plate (which will fit in steamer) and sprinkle with ginger and a generous amount of Soy. Place in steamer, cover and cook for 5 mins.

Throw greens on top, cover and cook for another 8-9 mins. (To check that fish is ready, make a small cut behind head.)

Then place broccoli and fish on plate and pour all juices over the top.
